Meal Plan Monday 5/14/2012

Lunch - Leftover White Castle Pie

Supper - Maria's Pizza

Tuesday

Lunch- Turkey Sandwich
S=Chicken Lasagna (take your favorite recipe and instead of using Lasagna noodles, use applegate deli chicken (on sale at Cashwise in place of the noodles)

Wednesday

Lunch - Cheesy Tomato Bacon Quiche (recipe to be linked later)

Supper - At church

Thursday

Lunch - Pizza (frozen)

Supper - Applegate Farms Hotdogs

Friday

Lunch - Spaghetti

Supper - Pizza Burgers - take 2 thin patties and sandwich pepperoni, mozzarella cheese and tomato sauce inbetween the two.

Saturday
Lunch - Tuna & Crackers with Tomato Soup

Supper - Chili Lime Kabobs (recipe to be linked later)

Sunday
Lunch - Taco Salad
Supper - Chicken Sausage & Zucchini Kabobs (recipe to be linked later)

White Castle Pie Recipe

Ingredients:  Serves 8
2 pounds ground beef
2 packages onion soup mix or seasoning mixture
4 eggs
1 cup Mayonnaise
1/2 cup heavy cream
16 ounces cheddar cheese, shredded
Salt & pepper to taste

1. Preheat oven to 350.  Brown the ground beef in a medium skillet.  Drain the fat and season with salt and pepper.  Stir in the onion soup mix.  Place the ground beef in a greased 9-10 inch pie plate.  Stir in half of the cheese, then top with remaining cheese.

2. Beat the eggs, mayonnaise, cream and a dash of pepper: pour evenly over the meat.  Bake at 350 for 30-35 minutes.  Let Stand 10 minutes before serving.

Southwest Skillet Recipe-Tuesday Tutorial

Southwest Skillet (I'm linking up to The Kurtz Corner)
Serves 8
8 Tablespoons butter
10 cups thinly sliced peeled raw potato of choice (I used Russet)
12 slices of ham, cubed
2 (4 ounce) can chopped green chilies
2 cups shredded cheese of choice
Salsa

Directions:
1. In a skillet, melt butter over medium heat.  Fry potatoes until lightly browned and tender.  Add ham and cook until heated through.  Sprinkle with chilies and cheese.  Remove from the heat and cover until the cheese is melted.  Serve in the skillet.  Top with salsa.

Meal Plan Monday

Here is my meal plans for the week: I'm linking up to Orgjunkie.com

Monday:
Lunch: Chicken Noodle Soup
Supper: Chicken Lasagna pictured below - Just take your favorite Lasagna recipe and rather than using Lasagna noodles I use Chicken Deli Cold Cuts. 
For a snack today I made these Almond Flour chocolate chip cookies using this awesome recipe from Eat the Cookie ( love that name as that is what I call Baby #5).  They are suppose to turn out crispy, but mine never do.  I have to bake mine for 20 minutes, also. 
Tuesday:

Lunch: Deli Meat sandwich as we eat on the run on Tuesdays

Wednesday:

Lunch: Protein Waffles 

Supper: Wednesday Supper at Church (my favorite meal of the week!)

Thursday:
Lunch: English Muffin Pizzas

Supper: Cream Cheese Burgers - Grass Fed Beef with Cream Cheese inside the burgers.  Yummy!

Friday:

Lunch: Grilled Cheese
Supper: Pizza

Saturday

Lunch: Tuna Sandwiches and Tomato Soup
